The increased demands of our times put at risk many traditional foods, as well as traditional processing techniques still available today. To economically survive and being sustainable in these modern consumer markets, SMEs producing traditional foods must extend their skills and production techniques as well as finding innovative ways to promote the characteristics and clear advantages of their products related to nutrition and health. To achieve the goals, or parts of the goals, of the Development Plans, the management and the personnel of the school in cooperation with the partner has developed this project. Within the project 2 weeks training of students in Greece has been developed. This project has provided students with knowledge how young entrepreneurs should set up and market a food processing business, to improve their communication skills, and at the same time to be part of a multi-cultural environment.
Taking into account that Serbia is the largest agricultural market in the Western Balkans with a strong tradition in agricultural production and food processing there is a need to introduce students with the modern trends and innovation in food processing. Project is in line with the strategic documents of the school but also with the strategic documents of Municipality Prokuplje. Project reflects local needs. In the Municipality of Prokuplje, the basic industrial production is food sector, and the prevailing type of economic activity is the food processing industry with share of 42.5%. This project has contributed to long term objective of the school to promote opportunities in food processing and bridge gaps in knowledge and barriers to innovation but also to long term objective of community to foster economic development by enhancing local food processing.
