With this project, we wanted to stimulate the professional growth of our 7th-year students, with an emphasis on craftsmanship, entrepreneurship, conceptual thinking, sustainability, digitisation and profiling. In addition, we wanted to sharpen their independence, entrepreneurial spirit, social and digital skills, and European citizenship. For the supervising teachers, the focus was on gathering knowledge about innovative kitchen techniques, sustainability, digitisation, and cultural differences.
With this project, Hotelschool Ter Duinen focused on expanding its range of international mobility programmes, with the aim of better aligning our learning programmes with the changing labour market. The international work placements provided valuable insights into developments in the restaurant sector and the professional needs of both students and teachers. In addition to product knowledge, the focus was on understanding innovative restaurant concepts and gastronomic trends.
